Please can someone recommend an earphone jack adapter? What do I need to plug my earphones into this Hipad Max tablet?

You should go for any USB-C to 3.5mm adapter. It should work.

Example:

That allows you to have a 3.5 mm jack for your headphones and plus a USB C connector
for charging. There are a lot of of them on Amazon I believe EBAY also has them
as well. Do a simular search there.
