I just wanted to let you know that there is another option if you want to use Linux with the Ubook Pro (M3 version).
You can manually install Gentoo linux on a USB key and then boot from it.
You can follow the installation instructions quite strictly (except for the device on which you will install the system: be careful or you will harm the host system you will be using)
The only thing you should be very careful about, is to install grub in efi-removable mode…
I remember I had to try a few times before getting it right.

Of course, Gentoo might be less friendly than Ubuntu/Mint… but it is a place to start.
And, once set, is very stable.
You would not use it as a 2-in-1, though, as the touchscreen,stylus and sensors are not working (or maybe they would but I never tried hard).
I can send my kernel config if you are interested.
Probably, there is a chance that Ubuntu/Mint on an external USB disk would work too… I tried but without success.
