My CHUWI Ai365 does not connect with HDMI to Display Port adapters. It works with Display Port to Display Port Adapters. I can display single or dual monitors using Display Port to Display Port Adapters.
Of course, it is possible. I tried several. This solution worked with multiple monitors.

Your explanation of the problem is confusing to me.
The computer has:
1 HDMI port, HDMI 2.1 TMDS
1 DisplayPort, DisplayPort 1.4 (compatible with DP++)
Which port does the monitor have?
How many monitors do you want to use?
It’s possible the cable isn’t the correct one.
Have you searched for a tutorial on Google ?
I have HDMI, DisplayPort, and USB-C. I have two monitors. Monitor 1 (VGA and HDMI connections) is connected to HDMI. Monitor 2 (HDMI [2x] and DisplayPort) is connected to DisplayPort. Monitor 2 (neither HDMI port) will not connect to DisplayPort via an HDMI-to-DisplayPort adapter. Only the DisplayPort-to-DisplayPort adapter works.

Update: I have added a third monitor via USB4. Looks like I can add a fourth with ease.
